From what I see, a Jr Suite at Coronado has a max occupancy of 6. I think it might be tight with 7 people in there, especially 5 adults. I would go for the adjoining rooms at a Moderate resort.

I prefer the theming of Carribbean Beach Resort to Coronado Springs, but we had a nice time at both. I think you'd have a nice time at either.
