Your plans look pretty good to me. Here's a few answers to your questions:
1. The crowds will probably be on the heavy side, but much lighter than the week of the Fourth. Make sure you utilyze FastPass.
2. You won't find free or discounted B-Day meals at WDW. There may be some restuarants outside of the parks that offer these. Make sure you stop by Town Hall in MK for your Birthday badge. CMs have been known to give bday guests special treatment.
