I would even say 2 days will be enough-- one day at each park as it should not be crowded during that week you are visiting. That can free up one day to do something else in Southern California besides Disney.
There is alot to see in Southern Calif. and Knotts Berry Farm is also close by for a 1 day visit if you think you want to stick to Amusement Parks
