Which Atlantic beach is good for...?

On the way home from our trip to WDW, we want to take at least a few hours to explore a beach. We're coming down on I75 but with no time to explore the gulf coast before checking in. On the way home, we're planning on taking I95, but any beach from Cape Canaveral up through St. Augustine would do. Highway 1A seems to run right along the ocean, so that might be really scenic. How much longer would it take, and is it worth it?
My girls have never seen the ocean, and I know they would love to collect seashells. My question is which beaches do you recommend? None of us will try surfing. We just want a beach to walk along and enjoy; we may swim a little. Which beaches are good for shells? Can you even collect seashells? I only ask because I have no idea. I'd love any and all opinions! Thanks!
