I just feel bad that we sometimes expect the challenge thread to appear, but I know I'd be running out of ideas if I were Marcie!
Personally, I struggle with one photo layouts -- especially if it's an 8x10, because those use so much of the space available.
How about the pages that are more journaling than photos?
Photos cropped to non-traditional shapes (I've seen a couple where the pics were cut into letters, but I never had the guts to try it)
Pages of the journey, rather than the destination -- the plane ride or the road trip
