Onsite choices:
Fort Wilderness Cabins sleep 6. The bedroom has bunk beds and a double bed. There is a pull down Murphy bed in the living area. This might work for your group. You can request bed rails for any of the beds for safety if needed.

Otherwise, I agree with the above. Two connecting rooms at a resort (door between to connect rooms). They should guarantee the rooms connect because you only have two adults. Also, a Home Away from Home resort 2-bedroom (villa-style) accomodation would work for you.
