My son will be 11 and is fairly tall for his age 5'1" right now, probably taller when we go in Feb. Will there be a lot of rides we can skip because he is too tall or too old?
I am hoping we can see everything in one day. 10am-5pm doesn't seem like a lot of time!

We went to the one in CA in 2010. DD was probably that tall, and pretty much went on everything (we skipped the little kids land). We were there from opening (10 AM) to closing (7 PM) but we also went to the water park (which I guess isn't open yet in FL). I think you should be able to do it!
We were there last week - my son is a month shy of 12 and right around 5". There were a few rides that he skipped because he thought they seemed too young for him.
With 4 kids, so everything seems to take longer for us! We were there from 10 am - 5 pm and were not able to do everything. We did get on just about all of the rides they wanted to go on, and we saw the water ski show and "The Big Test" show. We also took some time to stop and look around the Miniland USA area which they thought was totally cool. We skipped the whole Duplo area and the Imagination Zone as well as the Cypress Gardens area. You should be able to do the majority of the park but I would plan ahead to be sure you start with all of the areas you definitely want to see!
We were there the Saturday and Sunday of Thanksgiving weekend. On Saturday, maybe because of the holiday weekend, it was pretty busy, and we did not get to do everything the first day, definitely needed the 2nd. Sunday was much less busy, so I think it's possible, (but you'd be cutting it close) that during the week you could complete the entire park in one day. My son is 10 and my daughter is 12, and we did everything except the Duplo area (all rides, shows, etc). On our second day were were able to leave by 4pm because we had done everything. I think it really depends on what your child's interests are and how into it he'll be despite his size. My daughter is about 5'2" and she still fit into the cars for the driving school and was insistent she wanted to drive them. Their favorite ride by far was the coaster in the Technic area and the Jet ski style ride (neither of which I can remember the names of right now).

We are actually reconsidering adding Legoland to our trip this summer. Looking at the costs (for tix as well as food and lodging), we need to think about if we really want to spend $500 or more for a day at Lego land (which would require one less day at WDW or one less day visiting family in southern FL). DS will be 10 and is a HUGE lego fan. My girls are younger and not lego fans. Having been there...Is LL a MUST DO for your family? DS recently told us he would rather have a day to just "relax" at WDW. He also like the idea of buying a set the DTD lego store and actually being able to play with it while still on vacation.
Whether Legoland is worth a visit is really an individual choice. On our last visit to California, my kids were 6 and almost 11 and really enjoyed Legoland. We are going to Legoland Florida next week, and they're both excited about it. If you don't want to go, though, your kids won't know what they missed, so they should be fine.
Be aware that there are places to play with Legos at the park, so your son can do that without buying (and risking losing pieces from) a new kit. There are also rides for young and older kids, and lots of displays the whole family could enjoy.
One option is to have your kids take a look at the videos and descriptions on the Legoland Florida website then decide whether they want to go there or do something else that day. (Or, you could look at it and make that decision).

We hit driving school pretty early to beat the crowds, but there weren't really any lines of consequence - perhaps 10 minutes was the longest we waited, and that was for Boating School.
Many of the rides at Legoland have very poor throughput due to the design of the ride, so if there are crowds, I can see many long lines building during the day.
We had enough time that we rode Flight School 12 times, and two of our crew rode Coastersaurus 18 times in a row (no joke!).
As for cost - there are still valid buy one adult get one child free discounts on online tickets.
I have to say - as an amusement park/roller coaster junkie - Legoland was really a great park - especially fun with 3 boys 5-7! I thought the staff were excellent, and legos everywhere is just plain cool.

My 11 1/2 year old son and I just returned from Disney on January 17th, 2012. We drove to Legoland and were there before the park opened. We were able to ride all the rollercoasters and do the Ford Driving School twice, before the park became busy. It was just the two of us and we moved around pretty quickly. Right before lunch the park was very busy and lines were long. If you get there early you can do most of the park in one day. Have a great time.

Forgot to mention that for the most part, tall kids/adults were welcome on the rides. Royal Joust, and the driving schools were three that I couldn't go on - I think I went on everything else with the boys.
If your son has a serious growth spurt, he'll miss out on Flying School, as it has a 6'5" height limit

Think my DH who is 6'4 3/4" without shoes would make the cut?
We went on Monday, Feb 27th and the crowds were very low! The park was open 10-5. We didn't get to do absolutely everything. The only thing I am sorry that we missed was the indoor Imagination Zone part. We even fit in a walk around the old Cypress Gardens area. I'm writing a trip report over in the Disney section called "Pop and Legos" if you want to check it out. I will have lots of details and pics there.
