How old is your son? Is he into Mickey? Chef Mickey's or Lilo and Stitch - Ohanas or maybe the new Dinosaur themed restaurant (I'm blanking out on the name) over at Downtown Disney. There's always the arcades, watercraft, ESPN Club at Boardwalk, mini golf, horseback riding at Ft Wilderness. A few choices

The Pirates League looks really FUN! I wanted to do it! You could do the pirate "makeover" ride PoTC and then go to Chef Mickeys, Chip and Dales Garden Grille, or even Sci-Fi Dine in Theatre.
Maybe do T-Rex cafe at DownTown Disney
Main Street barbershop does a great job with colored hair gel and all sorts of designs.
HAPPY PLANNING!
