You will love seeing Pirates at the El Capitan. We went last year to see PoTC2 and can't wait to see PoTC3 this year. It's a great experience.
We are also going to SW celebration but we will be driving to the convention center daily. It's about an hour drive for us but I couldn't justify spending the money to stay downtown. My brother is coming from Atlanta to go to the SW celebration.
May is a good time weather wise to go to Disneyland. Also on May 19 and 20, the Jet Propulsion Lab in Pasadena is having their yearly open house. So if you are interested in Space Exploration at all, it's a neat free event.

I did a bit of googling & found the JPL Open House page: Open House 2007 -- that does sound like fun! One of DH's cousins has two young kids that might really enjoy this!
