The parks are quite small. My husband and I went there with no real plan and were fine. I'm a planner by nature and the only thing I did was get a reservation for dinner so that we could get preferred seating for the WOC show. That show is awesome and a must see!!
I was going to suggest a meal to see World of Color, but I can't help with the picnic idea, as we always eat at a table service restaurant for this.
I would say that you do need to plan in relation to Cars Land, as that is still mobbed. Make sure you're there first thing to grab a Fastpass and if you're on property, take advantage of the early entry to ride it first Radiator Springs Racers if you can, as the lines for that were insane when we were there (admittedly it was Christmas, but I can imagine it being busy all year round). If you're not on Disney property, then be sure to be there at park opening to try and snag a Fastpass, as they go quickly.
Yes, Racers is packed all the time so hit the park early to get a FastPass they are normally all gone quite quickly. I would also recommend staying, or returning to that park for the nightly ceremony when they light up the street it's SO adorable.
California Screamin' and Toy Story will probably be your next biggest wait times, aside from everything in Cars Land.
Disneyland/DCA are a lot smaller so it's more "conquerable", you can kind of stroll and enjoy yourself it's a more relaxed pace than WDW.
Thinking of doing the picnic meal to get access to WOC seating. Is this a good idea ?
I did this in 2010 and it worked out just fine. If I wanted to see WoC again, I'd go with the picnic again for sure. We picked up our lunch about 2pm and came back when they told us to. I don't remember when it was now though. There's a lot of sitting around and waiting though. No benches/seats. Just sitting on the concrete. Until they tell you to stand to make more room. Then it's all standing anyway for the show.

All great tips! Question - just how quickly do the FP for racers go?
Not staying on site, so I won't be in for EE. I was hoping to wait in the single rider line to ride first and then grab a FP. After how ever long that takes (maybe 45 minutes or so?), will the FP be gone by then?

What time of year are you going? Tour plan it if you go at any point in the summer or high crowd holiday weekends.
Right, sorry. Going for the Disneyland half marathon, Labor Day Saturday to be exact. Busy, I know.

We have used ridemax twice in the past. Once over Christmas and once during the summer. It is amazing. We waited on average 10 minutes for most rides. One night when we went back to our hotel we were talking to another couple, they were complaining that they waiting up to 90 minutes for some rides. We told them we were waiting 10 minutes using ridemax. They promptly downloaded the software and when we ran into them the next day they said it changed their experience. My sister and parents have used ridemax as well and even though they were not believers at first they were won over by the wait times. We wouldn't go to DL without it.
