We are heading to Disneyland in August with extended family members. DH and I can easily walk to and from the parks if necessary as long as they are farely close and in a safe area for walking, however one of the persons in our party has difficulty walking any distance. We are looking for a good neighbor hotel that is close enough for us to walk to but also has a shuttle for the one family member and one that also honors the early morning hours at the parks. We would also like to find a hotel that has a free hot breakfast and complimentary drinks in the evening. My husband and I don't drink but the other family members do. So we are just trying to find a hotel that will meet everyone's needs. I know this is a tall order but does anyone know of any hotels that satisfy all those things. The other family members had mentioned Embassy Suites Anaheim South. Any thoughts on that hotel? Any help will be much appreciated!

I'm sure others will chime in soon, but the Embassy Suites is a bit of a walk. With your needs, I think it's going to be tough to find a hotel with shuttle service that's also within walking distance. There's also a Crowne Plaza near the Embassy Suites that might have the amenities you're looking for.
If you need a shuttle, I would make sure it has a pretty regular schedule since you probably won't be wanting to make that walk more than once...especially after a day at the parks.

Howard Johnson is close enough to walk for us and also is on the shuttle line. Not so sure about the breakfast and drinks tho... Mimi's is right there, but you have to pay for it.
Not really a walking distance, but Peacock Inn & Suites was great last year and we're staying there again this August. It's on the shuttle line, and the passes are reasonable in price IMO.
Well, the Candy Cane Inn is near the main entrance and meets most of your requirements except for the afternoon drinks. I don't know of any hotel that has that in the DLR area.
Candy Cane has a dedicated shuttle and a free breakfast offering in the morning. (Mostly pastries, fruit, cereal and yogurt.) It's also close enough to walk for those that are so inclined.
None of the Good Neighbor hotels offer the Magic Morning perk that you get staying at one of the on-site hotel (i.e., getting it every day that they offer it during your stay) The only way to get that when staying at a Good Neighbor is to purchase a three-day or more parkhopper (and you get only one Magic Morning with that).
I have also stayed at Hojo and like it a lot, but it doesn't have a free breakfast and it is further away. It also doesn't have its own shuttle (it is on the ART route however and those tickets are relatively inexpensive.)
