Just looking for opinions - I can't decide whether to book an 8:00 breakfast at Akershus, or go for a later one around 10:30 or so.
Originally I was leaning towards the later time, figuring it would be an early lunch too; we were planning on getting to Epcot at park opening, doing a few things in the Land, then heading to breakfast. Now I'm thinking maybe I don't want to interrupt our morning and if we do an 8:00 breakfast, we'd still be in the park around opening, then have the whole morning without interruptions.....hmmmm, what to do, what to do?

This decision can be a dilemma. Consider how many steps you want to take. If you do the 8:00 am, World Showcase may not be open when you are done eating, so you'll walk back to Future World and enjoy the rest of your day.
If you do the later ADR, you may be "done" with Future World and ready to head to World Showcase anyway, so no backtracking.
Remember that Akershus has storybook dining all day, not just for breakfast. The menu changes to more Norwegian eats for lunch and dinner.

We did the latest possible time that was still breakfast and that was perfect. We had a light breakfast and this very much counted as lunch. It was one of our favorties. We got quite a bit done before brunch too!
I'd go with the early breakfast. This is because if you are going to do a later breakfast you might as well just have a small breakfast at the hotel and have an early lunch there.If you eat an early breakfast in the park you can get your day started early, as well as get some early fast passes.

I believe we had an 8:00 Akershus ADR and it was perfect! The girls (3 and 2 at the time) were in the best of moods. It being one of the earlier ressies the food was fresh and the restaurant wasn't really full, yet. I am a breakfast person, so I loved the breakfast dishes that came out family style, but you could also help yourself to assorted pastries, fruit, and other buffet type items. The Disney Food Blog offers a really good review and some great pictures.
We've done both times, and I much preferred the early seating! When we ate early (many times), we were in the first room over to the left side (where the princesses come out) so we were one of the first tables to be visited by them. We ate, and were ready to go by 9 AM and hit the park when it opened. For the late seating, we were seating on the opposite side of the restaurant, one of the last tables to be seen by the princesses. It just seemed that we were waiting FOREVER to be seen by them, and we just didn't enjoy the experience as much as the early seating.
Thanks all for the opinions! I am still truly torn, but we are early risers (me not so happily, but still...) so I am leaning towards the early. I have 17 days to decide - Feb. 22 is my 180 days out

I'd also vote for the 8am ressie. I'm always a bit hesitant to book a meal that is buffet (or in this case, has a buffet component) towards the end of whatever meal we are eating because I distinctly remember reading someone's TR where they mentioned how limited the buffet became since they were turning it over for the next meal. That's never happened to us, not sure if it's common or not but it's has stuck with me! On our trip last month we had one of the first ressie's for breakfast at Askershus and it was wonderful (and the buffet was wonderfully fresh and stocked full!)

We've done both. It depends what our plans for the day are. If we want an early lunch, then we'll go for a late breakfast, otherwise we'll go for first thing, so that we can eat early and then explore the park. I'd think about what you want to do for the rest of the day - that'll help you make your decision.
We are booking our ressies on Feb 21st! For Akershus, Wed Aug 22nd, hopefully for 8 am! Or adleast before 9am!!! What day are you booking for that week!?
