I've been busy booking my ADR's for my holiday this Oct 17th . As my daughter and I visit other places whilst on holiday we like to use our DDP credits on signature restaurants .
We have booked:
Polynesian Spirit of Aloha ( evening of arrival )
Via Napoli - first time eating there
California Grill - first time
T-Rex - first time
Narcoossee's
Yak & Yeti - first time
Flying Fish
Fulton's Crab House
We try to go to some restaurants that we love and some new each time .
We have used 13 of our 14 credits - still trying to think of a nice place to go for breakfast ( without characters as we have done most of them)
Your choices sound great and IMHO you will enjoy the places that are new to you, we did.
My Dh and I use our ddp the same way....have a 1 credit bfast or lunch and signature for dinner...it works out very well. A place we enjoy for breakfast when we are alone together is either Boma at AKL or Grand Floridian Cafe at GF according to whether we want a buffet or menu.
We just got back, and I cannot say enough good things about Via Napoli. You think you know pizza, well let me tell you, this is like nothing you have ever had! They import the flour, tomatoes and do something with similar well water like in Italy. They also have wonderful pizza ovens. The 3 of us girls had delicious individual pizzas and my DH had chicken parmiagian and I had a taste and he and I loved this also. The wait staff was also fabulous. I had a merlot that I told the waiter I loved and he came back to me with the name of it written on a piece of paper. The waiters posed for us for a few pictures and they were very comical in one!
The only negative is that it is extremely noisy!! There is nothing here to absorb the sound and you have to talk very loudly in order to be heard by people at your own table! But the food and atmosphere make it worth it.

Great choices! As far as breakfast, I'd suggest Kona Cafe. Some other places to consider, which I've never visited myself would be The Wave, and Kouzinna.
