PS: If you're going with kids, you can get them on board! My DS13 loves using the calculator to help figure out how many points a meal is, so if you can make it a family game, it can even be fun. My family isn't pressuring me or sabotaging me; they're supporting me, so I hope you get that same help, too.
Oh, I just saw how young your children are, so THAT won't work!

Last year, we generally ate 2x a day and then had a snack. We did a breakfast buffet that held us over until an early dinner. It was really handy with a picky toddler that happens to love breakfast food. We've got 1 breakfast buffet scheduled with an ADR.
Hopefully I can find a familiar option wherever we decide to eat at a counter service. Just being aware of about how many points are in things helps a lot.
We're bringing snacks with us as well as using Garden Grocer. Our room has a fridge, microwave, and toaster which means I can make most anything I need to in the room.

I wouldn't worry about counting your points, I'd just enjoy the trip and try not to go crazy. But remember you are on vacation! Also, keep in mind that at a lot of the counter service locations, the meals may be big enough for you to share. My husband and I did this a lot last summer, that way we could have a snack that we wanted without feeling guilty or too full! (Splitting meals also helps your wallet too!).
My parents and I are on WW. When we went in January we tracked the best we could by using the calculator. Of course not having the dining plan helped, as did ALL the walking. Mom and I both managed somehow to lose half a pound while dad kept his weight steady the two weeks we were there.
We go in August, so between the heat and the walking I've never gained any weight. I am, however, careful to eat lots of fruits and veggies. Buffets are actually easier for me - I can take small tastes of the heavier foods, but fill up on healthier selections.
I was there in Sept. 2012 and didn't count any points. I tried to eat reasonably, I did splurge a little, but walked in the parks after every meal. When I got home and weighed myself I had actually lost a few pounds! I think you're going to be walking so much you don't need to worry about it. I ate Mickey waffles, tons of stuff at O'hana's for dinner, the bread pudding, etc. Really, you should be fine, just walk after every meal, it also helped me digest when I was feeling super full. When we went to WDW in 2005 I'd been very successful on WW. I thought I was making good choices, I drank a lot of water and we did all that walking.
I gained 10 lbs in a week.
My WW leader said there "was no excuse to ever gain on a vacation" so I didn't go back.
Your leader needed a refresher class.... My leader, Hal, who was a huge influence and motivator end til this day even though he doesn't lead anymore taught us to budget for vacations. He would say, ask yourself how much are you willing to gain on vacation? It worked wonders! I usually always ended up right near what I "budgeted" which was usually 5 pounds.
I have been a WW Lifetime member since 2003 and been to WDW many times...it is do-able! You have already gotten some great tips...and this has been a topic on the boards before so you can also search for those previous threads. Great tips!
Ask your leader about SImply Filling (not sure if the WW 360 program still has the separate handout for that...but maybe check on website, too or ask leader to explain). You can choose to eat mostly Power Foods and just track the weekly 49 for anything that is not on the Power FOods list (such as dessert...unless it is fruit!!)
There are healthy and delicious choices at WDW (and some less healthy...) but you can definitely fare well and maintain your WW plan. You can also ask for things to be modified (less condiments, "on the side", baked potato instead of fries...they are wonderful at helping you get a meal that will satisfy you!)
Eat lots of zero point fruit!! Does DOle Whip count?
And enjoy! Part of the WW program is NOT depriving yourself. You don't have to walk past every popcorn stand and muster up the will power...you can enjoy those special treats!
If you use the MObile apps, that would be helpful. I would also suggest using Activelink or a Pedometer to determine how many points plus values you might earn from all the walking.

With all the walking, I wouldn't really worry about it. I don't know how much exercise you normally do, but I think some people have said a "normal" person will walk 5 miles per day. And you have little ones, so you probably have additional running around.
I am on WW too and headed down to WDW next month. I am planning to use some of the ideas (breakfast in the room, bring snacks, etc.) One thing that has helped me in the past is to put my water bottle in the freezer and bring it to the parks. Often I eat when I am really just thirsty, plus if it is hot out I tend to hit the ice cream stands, etc. Having cold water in my day bag helps.
Just a thought, and keep us posted on what you decided to do. Apparently there are lots of us with the same struggle

Also with the active link that they have now can help you figure out extra activity points. With all the walking that one does especially with children on the trip the active link can be a big help just remember to bring a laptop to plug it into at night. I already have the active link and plan on bringing it with me in August to see how many points I get each day. Also if you have the ww app on your phone or iPad (if you have one) you can access the Buffett cheats and figure out some points there. But most of all have fun.
My pedometer app told me I walked 14 miles on Tuesday at Epcot. That was during a time that the only ride we rode was Nemo twice.
I didn't make the best food choices, but I didn't overeat. That's hard tondo with a baby either strapped to my chest or demanding to be fed and a cranky toddler that DOES NOT want to sit down for a table service meal.

14 miles!?!? That is great. Plus 2 babies? I hope you are enjoying yourself..... One other hint I have been using on WW is to not order my own treat but to have a bite of my kids. I still track it but I only take a bite if I really want it. That saves me from eating an entire pretzel or ice cream and I am satisfied with just a bite. Good luck.
