Great choices! I would recommend Boma or Jiko for your day at AK. Tusker House in the AK park is very good as well.

Your plans look great.

RFC has really big portions so you may not want a sit down dinner at AK but something smaller. We split a QS from the Flame Tree Barbecue which was good. I want to try the picnic on our next trip. You may want to try that and then have RFC for dinner on the way out of the park.

Whatever you decide - enjoy it & have a great trip.

if you get mama melrose (which should be an easy one to land) maybe skip eating italian again in epcot and go for rose and crown...you could even bump out your rose and crown time to coincide with illuminations - they have great views!

At AK, my fav TS restaurant is Yak & Yeti in the park, or Boma at AKL, a quick 5 min bus ride away. If you are looking for 2 TS restaurants for AK day I'd go for Yak & Yeti for lunch and Boma for dinner. Or the new TS Saana in the new Kidani Village. I'm not a fan of Raintree, atmosphere is fun, but food, not so much.
For a CS at AK, we live Flametree BBQ.

Animal Kingdon closes at 6PM the week before, we will be leaving the 1st of May. So I would suggest maybe going to Animal Kingdom Lodge and doing Jiko or Boma. We personally loved Jiko the best! Everything looks great. Good luck
