I was wondering this myself since I am a gastric bypass patient and I KNOW I will not finish an entire meal on my own. My DD will not even finish a meal. SO we usually end up sharing all the time anyway. At home this is no problem since we tend to frequent certain restaurants that know us and our situation, but I wasn't sure about WDW.

Yes, you can split a meal and use only one TS credit except at buffet style meals.
