Well I like Pumpkin roll & Pumpkin Cheesecake(the old fashioned kind, from scratch & baked, not no-bake). But I'm still waiting for the Pumkin Chili recipe Chrissi was talking about a week or two ago. [img]/ubb/images/graemlins/jack.gif[/img]

My pumpkin pie recipe is in the Gooseberry Patch Sweet & Simple cookbook, so that's definitely a fave! We also enjoy pummpkin muffins: 2 boxes cake mix, chocolate or spice, add 1 large can of pumpkin or freshly baked pie pumpkin (nothing else), stir, scoop into muffin tins, and bake at 350 for about 10-15 minutes. Dense, chewy, yummy!

I also make a pumpkin/peanut soup, but I'll have to look up that recipe.

I love this soup. I've also made it with butternut squash that I have roasted then pureed:

1 sprays olive oil cooking spray, or enough to coat pot
1 medium onion(s), coarsely chopped
15 oz canned pumpkin
3 1/2 cup fat-free chicken broth
15 1/2 oz canned white beans, rinsed and drained
1/4 tsp ground oregano
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
6 Tbsp grated Parmesan cheese


Instructions

Coat a large soup pot with cooking spray and set over medium-low heat. Add onion, cover and cook until tender, stirring occasionally, about 6 minutes.
Stir in pumpkin, broth, beans and oregano; simmer 8 minutes.
In a blender, process soup in batches until smooth. (Note: Make sure not to overfill blender in order to avoid splattering.) Return soup to pot and reheat; season with salt and pepper.

To serve, ladle soup into bowls and top each with 1 tablespoon of grated cheese. Yields about 1 cup per serving.

Gosh, did I say I had a recipe? [img]/ubb/images/graemlins/blush.gif[/img] I rarely use actual recipes. The last time I made pumpkin chili, I made my usual chili with fewer beans (though I do use some dark red kidney, black, and great northern beans) and added some pureed roasted pumpkin and V8. You want measurements? - you're out of luck. [img]/ubb/images/graemlins/wink.gif[/img] I don't measure. I just throw things in until the pot is full. [img]/ubb/images/graemlins/smirk.gif[/img]

Here is one of my favorites!



Pumpkin Gingerbread Trifle
Recipe courtesy Paula Deen
Show: Paula's Home Cooking
Episode: Thanksgiving
2 (14-ounce) packages gingerbread mix
1 (5.1-ounce) package cook-and-serve vanilla pudding mix
1 (30-ounce) can pumpkin pie filling
1/2 cup packed brown sugar
1/3 teaspoon ground cardamom or cinnamon
1 (12-ounce) container frozen whipped topping
1/2 cup gingersnaps, optional

Bake the gingerbread according to the package directions; cool completely. Meanwhile, prepare the pudding and set aside to cool. Stir the pumpkin pie filling, sugar, and cardamom into the pudding. Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl. Pour 1/2 of the pudding mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding, and whipped topping. Sprinkle of the top with crushed gingersnaps, if desired. Refrigerate overnight. Trifle can be layered in a punch bowl.
