Pomegranate-glazed sweet potatoes

The next time you need a really good sweet potato recipe, and your looking for a change from the same old mini-marshmallow recipe, try this. I made it today and it was a huge hit! Perhaps my family's tastebuds have evolved afterall. [img]/ubb/images/graemlins/laugh.gif[/img]

I didn't follow the recipe to the letter. For example: Instead of sweet potatoes I used baby yams- their flavor is more delicate. I ran out of fresh rosemary, so I used some I had on my spice shelf. I only used a pinch- rosemary is a wonderful spice, but it's strong. My potatoes cooked to the point that I ended up mashing them in the pan. The freshly squeezed pomegranage juice was a subtle and refreshing flavor. I didn't tell anyone what was in the dish, until everyone had tasted it. (Of course they all assumed it was standard sweet spuds- I enjoyed watching their reactions as they tasted it. My DSIL, who doesn't usually like sweet spuds, loved this dish!)

Pomegranate-glazed sweet potatoes

To make pomegranate juice, halve the fruit and use an orange or lemon reamer to squeeze the seeds.

4 orange sweet potatoes (about 1 1/2 pounds), trimmed and cut into 3/4-inch-thick rounds
2 teaspoons kosher salt
1/2 cup pomegranate juice (from 1 pomegranate)
2 tablespoons sugar
2 tablespoons butter
1/2 teaspoon chopped fresh rosemary
Grated rind of 1/2 lemon
2 tablespoons pomegranate seeds

1. In a large skillet, lay the sweet potato rounds flat and pour in water to cover. Add 1 teaspoon of the salt. Bring to a boil, lower the heat, and let the water bubble gently for 6 to 8 minutes or until the potato slices can be pierced easily with a fork.

2. In a small bowl, combine the pomegranate juice, sugar, and remaining 1 teaspoon salt.

3. Drain the water from the sweet potatoes. Add the pomegranate mixture and butter. Without moving the potatoes, cook them over medium heat for 18 to 20 minutes or until the liquid evaporates completely. Turn each slice over. Sprinkle with rosemary, lemon, and pomegranate seeds.

Thanks, Nancy. I saw some pomegranates in the store the other day, and wanted to buy one, but didn't know what to do with them. I'm going to try this recipe.
