| I made these tonight for dinner, and WOW! I loved them! They were so different from the usual same ole thing. I've had this recipe in my file for fifty forevers (to quote "mestitch" ) ,so I thought I would give it a go. Here it is:PACIFIC RIM CHICKEN BURGERS WITH GINGER MAYONNAISE (First Place, National Chicken Cooking Contest) 1 1/4 pounds ground chicken 2/3 cup panko crumbs (Japanese bread crumbs) 1 egg, lightly beaten 2 green onions, thinly sliced 3 tablespoons chopped cilantro 1 clove garlic, minced 1 teaspoon Asian hot chile sauce 1 teaspoon salt 1/2 cup bottled teriyaki glaze 4 teaspoons honey 1 tablespoon vegetable oil 4 sesame buns, split and toasted 4 leaves red lettuce 1 cucumber, peeled, seeded, halved and thinly sliced lengthwise Ginger Mayonnaise (recipe follows) Cilantro sprigs In large bowl, mix together chicken, panko, egg, onions, cilantro, garlic, chile sauce and salt. With oiled hands, form into 4 patties. In small bowl, mix together teriyaki glaze and honey. In large non-stick fry pan over medium-high heat, heat oil. Add chicken patties and cook on medium heat, turning and brushing with teriyaki glaze, about 10 minutes or until done. Place burgers on toasted buns and top with lettuce, cucumber and ginger mayonnaise. Garnish with additional cilantro and cucumber slices. GINGER MAYONNAISE In small bowl, mix together 1/2 cup mayonnaise, 2 teaspoons sweet pickle relish, 2 teaspoons minced fresh ginger, 2 teaspoons lime juice, 1 clove garlic and 1/4 teaspoon salt. Now, here's what I did a little differently: - I didn't have Japanese bread crumbs on hand, so I just used regular. - I'm not a fan of cilantro, so I just left it out. - I didn't use the full teaspoon of salt called for; that's way too much. - I was out of Asian hot chile sauce, so I just used a pinch of crushed red pepper flakes. - I only had a 1 lb. package of ground chicken, not the 1 1/4 that's called for. - Make sure your burgers are cooked through and finished before glazing with the teriyaki/honey combo (it burns). The burger will take longer than 10 minutes to cook, believe me. - If you don't have cucumbers and lettuce on hand, just slice a tomato thinly as a substitution. - And remember, fresh gingerroot and lime juice are key! ENJOY!!

| I love it that you added what you did different. That way I know it will be okay if we don't follow exactly, but what has to be done exactly. I'd love to make these, but Pat wouldn't eat it. Just the kids and I. Maybe when he travels for work I can. |
