Easy & healthy meals to cook while in WDW?

My family is renting a 2br villa while visiting WDW and we will have a full kitchen. My question is, What sort of food would you make?
We have (very recently) become health conscious and are pretty new to cooking in general. So, that being said, I want to save money , time and my waistline by cooking in our room. But I have no idea what to make while we're there.
Should I go the prepackaged route, or does anyone have any easy, healthy, kid friendly meal ideas?

I always make a lot of meals while at WDW. We stay in a 1 or 2 bedroom at a DVC resort. Where are you staying? Do they have grills? I always make grilled chicken (marinated in low fat italian dressing) on the grills. We also have hot dogs as I always buy low fat/fat free ones and DS#1 just can't eat a high fat hot dog without getting sick. I have also made whole wheat pasta and salad, chicken parmeasean with low fat cheese. Also I love grilled veggies-either on the grill or roasted in the oven.

We are staying offsite at our friends timeshare.
I'm not sure if there is a grill there on not. I hope so!

Can you bring a crockpot. When we had a 2br, we have done chicken cacciatori and Spaghetti (meatballs are too much work for me in Disney). But I just buy a package of the Tyson or Purdue chicken tenders, and put them in the bottom of the crockpot in the morning with Paul Newman's sockarooni spaghetti sauce on top. Let that cook, and then when you're ready for dinner make some spaghetti and serve the chicken and sauce over the spaghetti--- that's just what I make when I don't have time to make meatballs. Hotdogs and french fries are always easy one night (with or without a grill). I'm hoping thsi will be our last trip in a studio, because we like to eat in a few nights (the restaurants get old for us every single night). We also always order Papa John's pizza one night.

Taco soup is always a quick, simple and I believe fairly healthy option. Its also easy to adjust for different numbers of people.

Basic Taco Soup
1 lb of ground meat (beef, turkey, chicken whatever you want)
1 can Ranch style beans (with jalapenos if you like it spicy)
1 can black beans(also with jalapenos if you like it spicy)
1 can Ro-tel tomatoes (this is one place you can adjust the spice level if needed can get mild.)
1 bag frozen corn
1 package taco seasoning
1 package ranch dressing mix(must be dressing not dip mix)

Brown ground meat and drain. Add all vegetables. Add taco seasoning and dressing mix. You may want to add water at this time if the soup is too thick for your liking. Cook until it comes to a boil, let simmer for 15 mins, doesn't really need to cook for long, just enough time to heat all the vegs through and blend flavors. Serve over tortilla chips with shredded cheese and sour cream.

This is something that stays on our menu year round.

ETA: There is a lot of fiber and protein in this dish thanks to all the beans.
