We went to church tonight, so we ate out at Montana Mikes. I had a catfish fillet dinner with rice pilaf and salad, Luke had a Cajun chicken sandwich with fries, and Stefanie had chicken tenders and fries.

I had a paper to write today, so I made it easy...chicken cordon bleu in the oven, Uncle Ben's rice in the steamer, and broccoli in the micronuker. 5 minutes to prep and easy enough DDs could handle the rest.

I was bad...we ordered in. It was just DD and I, little DD was sleeping at grandma's house so we ordered from this chicken place - they have pretty good sides, lots of vegatables so we splurged.

Grilled burgers and oven-baked steak fries. It was tasty...not Victoria and Alberts, but still...not bad.

Does anyone have any really good low cal dessert recipes that they would like to share?? I crave sweets, but I've lost 30 pounds and I've got 50 to go....

Went on a cooking binge yesterday which should get us through the whole weekend with leftovers! Made a turkey meatloaf, roasted veggies (eggplant, onion, mushroom, zuchinni drizzled with olive oil garlic and herbs), marinated green bean almondine, corn bread, banana cake with cream cheese frosting, and some tuna-egg salad for lunch today. Also washed and tore up a head of lettuce so I could throw together a salad and cut up celery and carrot sticks for snacking. Today it's paper plates and no cooking!

We were bad for the budget and the health last night. We picked up Carl's Jr. on the way home from Jack's baseball game.

Not healthy -- Zaxbys (chicken finges, french fries, texas toast) And not really a budget either, however my rule is that we limit ourselves to eating out once per week- Sundays, so not too bad.
