| Making Cheese? I found this great book excerpt in Mother Earth News from Barbara Kingsolver's book Animal, Vegetable, Miracle: A Year of Food Life and now I'm all curious about making cheese. DH said we could try it, I'm so excited! ![]() "With homemade cheese, you have control over what goes into, and what stays out, of your cheeses." Have you ever made your own cheese? Would you try it? We're going to start out with some of these recipes: Easy Cheesy: 4 Super-Simple Recipes but I was hoping to advance to something that would last longer, or an "aged" cheese, and was wondering if anyone here had done it.

| Never done it. There's something about the intentional addition of bacteria to food that I'd prefer to have done by the experts. Or do you not add anything? I guess I've always thought of cheese as "milk that spoiled under carefully controlled conditions" which puts it on my list of "do not try this at home." Don't get me wrong -- I love to eat cheese. I just prefer not to know too much about how it got that way!

| Many moons ago, I made yogurt cheese. Even MORE moons ago, I was a cheesemonger and one of the things we did was make/age cheese (for the "experience"), but I honestly don't remember that much about it...

| I would like to watch what Ellie eats also, but I just don't have the time nor the energy to make cheese. Besides....with DH around, I have enough cheese already!
