| Made up crock pot chicken recipe I made up what turned out to be a really tastey and easy crock pot chicken recipe last night. I had pulled a package of chicken thighs out of the freezer the other day and needed to cook them but a) didn't know what I wanted to do to them and b) due to the pathetic state of my pantry and kitchen cabinets and fridge had seriously limited options. I did however have an unopened bottle of Paul Newman's Basalmic Vinegrette and a bottle with a few glugs of red wine in it in my pantry. So I ended up putting the chicken in a crock pot with a little fresh rosemary (I have an herb garden) most of the balsamic vinegrette and the wine then cooked it on high for about an hour and then turned it down to low for about 4 more hours. OMG, is it tastey. It's incredibly tender, moist, and flavorful because it almost completely covered in the vinegrette and wine and cooked for a long time. I didn't even bother with taking the skin off the chicken before putting it in the crock pot just dumped the chicken in as it was. You could turn the liquid in the crock pot in to some sort of sauce or glaze if you wanted to. |
