| I'm having over my BFF and her DH for dinner next week ![]() . Terry and I are going to be planning our trip to WDW to celebrate our 50th birthdays.I would like to have a Disney dinner to get us ready. If you could prepare an easy/good meal what would you serve? I won't have alot of time to prepare as I have to work the day of the dinner (unless my darling boss will give me the day off).If you could give me any ideas I would really appreciate it. ![]()

| LeCellier's Canadian Cheddar Cheese Soup isn't too bad to make, and it makes a great appetizer. You could pare that with some steaks on the grill, a salad and some sort of yummy dessert. I did use the Canadian Black Diamond white cheddar cheese. It is expensive, but very good. I substituted Guiness for the beer, but I'm sure you could use whatever you prefer. Here is the recipe (I found it on Deb's Unofficial Walt Disney World Vacation Information Guide - WDW Planning Guide - Walt Disney World) Canadian Cheddar Cheese Soup- LeCellier Epcot Yield: 6 servings Ingredients: 1/4 lb. smoked bacon finely chopped 1 medium red onion cut into 1/4 in. pieces 1/2 cup finely sliced celery 1/2 cup finely chopped carrots 3 TB all-purpose flour 3 cups whole milk 2 cups chicken stock 12 oz. grated white cheddar, Canadian Black Diamond 3 dashes Tabasco 1/2 tsp. Worcestershire sauce 1/2 cup Moosehead Canadian Ale, room temperature salt and pepper to taste 1 TB thinly sliced chives Method: 1. Cook the bacon in a large heavy-bottomed, non-reactive soup pot over medium heat until wilted but not browned. 2. Add onions, celery and carrots and cook until the onion is translucent and bacon has crisped. 3. Sprinkle in flour and stir constantly for 2 minutes. Stir in milk and stock, a little at a time, blending well to ensure there are no lumps. Bring to a boil, then cover and simmer for 15 minutes. 4. Remove from heat and whisk in cheese, Tabasco, Worcestershire and ale. Season with salt and pepper to taste. Serve with your favorite bread and top with chopped chives. For dessert, how about the Berry Cobbler from Artist Point? Since it is summer, fruit desserts always go over well. Berry Cobbler - Artist Point Resort Ingredients: 3 cups all-purpose flour 1/4 tbsp. salt 2 1/2 tbsp. baking powder 1 1/8 cups granulated sugar 1/2 cup unsalted butter 2 eggs 1 cup heavy cream 2 cups blueberries or other seasonal berries 8 tbsp. brown sugar 8 tbsp. unsalted butter Whipped cream or ice cream Method: Combine the flour, salt, baking powder and sugar. Break the butter apart into small pieces and mix it in. Add the eggs and stir until just absorbed. Add the heavy cream and mix just enough to incorporate (batter should be lumpy). Divide the dough into four pieces. In four 6-inch cake pans lined with parchment paper, place the pieces of dough, spread evenly along bottom of the pans. Spread the blueberries on top of each piece. Sprinkle each with 2 tablespoons brown sugar. Dot each with 1 tablespoon butter. Bake in a preheated 350º F oven for 15 minutes, or until an inserted toothpick comes out clean and dry and the cobblers are lightly browned. Cool to room temperature, add fresh berries (if desired) and serve with a dollop of chilled whipped cream or vanilla ice cream. Good luck with your dinner! Let us know what you end up making.

| Disney planning definitely requires a Disney dinner! ![]() Here's a few of my favorites and the recipes are on allearsnet.com: For not too much prep time, I would do: Cobb Salad (Hollywood Brown Derby) Bourbon Strip Steak (Yachtsman-delicious! )Root Mashed Potatoes (Cinderella's Royal Table) Chocolate Moose Crunch (BOMA) With a little more prep time, more of my choices would be: Chicken Corn Chowder (BOMA) Cheddar Cheese Soup (LeCellier) Maple Glazed Salmon (LeCellier) Spirit of Aloha Rice (Polynesian) Tie-Dyed Cheesecake (POP-Red Velvet Cake )Have fun! What a great evening you have planned!
