Beat 2 eggs, granulated sugar, baking powder, salt, lemon peel and lemon juice with rotary beater or wisk until light and foamy. Pour over hot crust; sprinkle with reserved crumb mixture. Bake about 15 minutes, or until light brown. Sprinkle with confectioners’ sugar.

Cool. Cut into bars, about 2 x 1- ½ inches. (32 bars)


* (Use juice of 1 large lemon)

I make a cute dessert for summer parties.....it's my recipe for DIRT.....except I use vanilla oreos instead of the original (cheaper store brand sandwich cookies can be used if vanilla oreos are not available) and present it in a plastic beach pail and shovel set (NEW, of course) pail as the container and use the shovel as the serving spoon......if you can find candy or chocolate sea shells.... I put afew in top right before serving. It really is cute and people always request the recipe. (now is the time to buy beach/sand toys....end of summer clearances) rella
