In need of a good summer dessert recipe!

Howdy all! I'm visiting my aunt and uncle at their beach house this weekend and would like to bring some baked goodies. Any favorite dessert recipes you care to share? Nothing too complex... I'm not very advanced... but I do have a Kitchen Aid (a dusty one, but still in good working order!). Any ideas would be appreciated!

It all depends on what you want to do.

You could do a watermelon bowl-with fresh fruit cut up in it. You cut the watermelon so that it looks like a basket, then you "dig" the watermelon out and cut it up and put the other fruit into it.

You could also do a watermelon cake or an orange cake.

You can do kick the can ice cream when you get there.

you can do a dump cake.

you can do guess again cookies.

you can do pinwheels and cinniomon balls.

lemon pound cake.

hot milk cake

The list is endless...it all depends on what you want to make.

So, my suggestion isn't a baked good, but very yummy. To me, nothing screams 'summer' like something frozen and strawberries. I actually made this for a July 4th beach party and it was a hit. I found the recipe on the coolwhip website:

Strawberry Whipped Sensation

cups fresh strawberries, divided
1 can (14 oz.) EAGLE BRAND® Sweetened Condensed Milk
1/4 cup lemon juice
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
8 OREO Cookies, finely chopped
1 Tbsp. butter, melted

LINE 9x5-inch loaf pan with foil, with ends of foil extending over sides of pan. Mash 2 cups of the strawberries in large bowl. Add condensed milk, juice and 2 cups of the whipped topping; mix well. Pour into prepared pan. MIX chopped cookies and butter. Spoon over whipped topping mixture. Cover with ends of foil and gently press cookie mixture into whipped topping mixture. Freeze 6 hours or until firm. INVERT dessert onto serving plate when ready to serve; remove pan and foil. Spread remaining whipped topping onto top and sides of dessert. Slice remaining 2 cups strawberries; arrange over dessert. Store leftovers in freezer.

I love lemon desserts in the summertime.

LEMON BARS

1 egg
1/3 cup butter or margarine, softened
1 package lemon cake mix
2 eggs
1 cup granulated sugar
½ tsp. baking powder
¼ tsp. salt
2 tsp. grated lemon peel
¼ cup lemon juice *
Confectioners’ sugar, if desired

Heat oven to 350°. Mix 1 egg, butter and cake mix (dry), until crumbly; reserve 1 cup. Pat remaining mixture lightly in ungreased oblong pan, 13x9x2 inches. Bake 12 to 15 minutes or until light brown.

Beat 2 eggs, granulated sugar, baking powder, salt, lemon peel and lemon juice with rotary beater or wisk until light and foamy. Pour over hot crust; sprinkle with reserved crumb mixture. Bake about 15 minutes, or until light brown. Sprinkle with confectioners’ sugar.

Cool. Cut into bars, about 2 x 1- ½ inches. (32 bars)


* (Use juice of 1 large lemon)

Easiest delicious dessert

Not an attractive name but incredibly easy to make, DUMP Cake

Take a large can of drained crushed pineapple and pour in the bottom of a 13 x 9 pan
then dump a can of cherry pie filling on top
then pour a box of yellow butter cake mix on top of that (I use duncan hines moist) just the mix powder, not with the oil and eggs
some people also dump some cococunt and chopped nuts on top
put pats of REAL butter all over the top of the pan
Bake for 30 minutes at 350 or until bubbling and parts are browning

Be careful, its very hot when you first take it out dont bite in right away Aghhh!
Great served with ice cream

This is what I'd do as well. Purchased pound cake works great as well. Just slice it up before you go and they'll never know you didn't make it. Pre-slice your fruit and dust it with some sugar to make a lovely juice. Whip up some fresh whipped cream at their house and you have an elegant dessert with minimal fuss.

My favorite summertime dessert is called Angel Lush. I got the recipe from the Kraft Foods website. It is really easy and looks beautiful! I use toothpicks to hold it all together, or else it does have a tendency to slip apart. Best of all, not only is it cool and refreshing, but it is also low fat.

1 can (20 oz.) crushed pineapple in juice, undrained

1 pkg. (4-serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling


1 cup thawed COOL WHIP LITE or COOL WHIP Sugar Free Whipped Topping


1 pkg. (10 oz.) round angel food cake


10 fresh strawberries


MIX pineapple and dry pudding mix in medium bowl. Gently stir in whipped topping.
CUT cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with one-third of the pudding mixture. Repeat layers two times.
REFRIGERATE at least 1 hour. Top with berries just before serving. Store leftovers in refrigerator.

Another person who loves the Angel Lush cake, have made it for a few parties and people LOVE it. I also add some toasted coconut on the top, seems to go over well.

I don't like to bake in the summer so my yummiest desserts are also very easy.One of our favorites is to take a bag of Chips Ahoy cookies and dunk the cookies in milk. Layer the cookies with Cool Whip and drizzle each layer with chocolate syrup. Use the whole bag of cookies and a large cool whip. I layer everything in a pretty glass serving bowl (a trifle bowl works well). Let sit in the refrigerator overnight and serve. I know this sounds like a strange recipe but it is very good.

Another one we all like is an Ice Cream Sandwich pie. In a 9 x 13 pan, make a layer of ice cream sandwich pieces (I cut each sandwich into 6 or 8 pieces) then cover with Cool Whip. Mix 1/2 jar Hot fudge sauce with one shot of Kahlua and mix 1/2 jar of caramel sauce with 1 shot of Kahlua. Drizzle these mixtures over the cool whip and then make another layer of the same. Freeze over night to set and then serve. I use a box of 24 of the store brand ice cream sandwiches and then a small box of the low fat chocolate ice cream/ chocolate cookie ice cream sandwiches. This is such a rich and cool dessert - it's very yummy!

for all the angel food cake lovers.....here's one i learned from weight watchers
this recipe is totally fat free....it does, however have sugar, of course.
Preheat oven to 350..use a glass pan - metal reacts to the acid

one pkg angel food cake mix (robin hood, duncan hines, etc)
one 19-20 oz can crushed pineapple. do not drain......
mix these two ingredients together......ONLY THESE TWO
(do NOT prepare cake mix)
the mixture will foam up
pour into UNGREASED 9x13 pan and bake until golden brown and toothpick comes out clean......I start checking at about 25 mins.
This is a very moist, and quite dense cake. It is delish!! I serve it with Cool Whip and raspberries Yumm-o
