Tonight we did cheese fondue, but tomorrow, I'm making 'Pleasing Pineapple'. Cut a pineapple in half, lengthwise, and cut out the core and flesh. Make chicken salad (celery, mayo, almonds or macadamia nuts) and serve in the hollowed out pineapple halves. Very lovely and yummy!

We went out to a diner. I had a Monte Cristo sandwich (french toast with ham and turkey and melted havarti cheese, yummo!). I ordered fries, but couldn't eat more than five of them.

I've made Paula Deen's Bacon Cheeseburger meatloaf before - it IS very easy and delish. I recommend using extra bread on the bottom, though, to soak up more grease!

We went out last night to a local restaurant, The Copper Penny - they have a great county-buffet and salad bar. I had a salad and then some grilled chicken tenders, corn, baby lima beans and mashed taters. Good, and pretty healthy!

Tonight I'll probably have leftovers of the Mexican Casserole I made the other night - it's really low-fat and REALLY yummy!

We had General tso's chicken (sauce from a bottle mix), jasmine rice, fresh steamed green beans and homemade cookies for dessert. DS16 had all that and is now rummaging around the refrigerator looking to make a smoothie....
