Black Bean Soup

It was cold, rainy, and windy today here in MT. I decided to make a comforting black bean soup for my lunches this week as it's not projected to be very warm here. I started with the recipe in the current Healthy Cooking magazine and added my own touches. With fat free broth, lots of veggies like onion, celery, and tomatoes, and a nice zip from hot sauce, it's going to be a great week in the lunch department!!

Do you use beef broth. I made a black bean soup with beef broth once and loved it, but lost the recipe.

You've inspired me. Last night I threw some frozen chicken broth, 1 large can black beans (rinsed), 1 can stewed tomatoes (with celery, onions and green peppers) and some cut up carrots into my crock pot and this morning I had a yummy smelling soup. I should have added some brown rice but I forgot. oh well there's always next time. That will be my lunch today.
