My 19 yr. old son loved this! He said it was great with a tall cold glass of milk, but next time he wants to try it with ice cream. I do not dare try this with my gluten allergies, but the rest of the family have made copies so they can try it at home too. Thanks for a great recipe!

Maybe my coffee mugs are little, but I can't imagine all those ingredients fitting in a mug. Do you mix it up in something else first, then pour it in? Does it overflow into your microwave?

I used a regular coffee mug. It might've been slightly higher than the short squaty ones. It puffed up and looked like it was going to go over the edge of the cup but didn't. Made it again tonight.

Tried it and loved it. Split it with DH. Served it hot out of the microwave with a scoop of vanilla ice cream. What a great idea. And no leftovers to think about and try to resist later. Thanks for sharing this recipe.

I was wondering...do you think this would still work if I substituted apple sauce for the oil? I'm counting calories and the oil really ups the total. Any thoughts? TIA!

Well, I've never done any baking where you substitute apple sauce for oil. I've heard of it but never done it. It couldn't hurt ~ you're not out too many ingredients if it flops. You could also try Splenda.
