DH made his own version last night to use up some leftover mashed potatoes, and the kids loved them! We'll have to give Sara's recipe a try next time around. Yum!
When I was a kid, before microwaves, my dad would make these with my mom's leftovers. My dad called them Potato Pancakes. I was so disappointed the first time I went to Perkins and ordered Potato Pancakes, and they weren't my dads!

Potato pancakes are the only way I like to eat mashed potatoes (I saved a whole "side" from the Outback the other night for this very purpose!), but I must say, my recipe (dump mashed potatoes into frying pan with olive oil) is much less sophisticated. I can't wait to try this one! Thanks for sharing!

We had scrambled eggs with ham (leftover from New Year's Day dinner) and cheese. Deeeelicious!

PS - my son was terribly disappointed in the potato pancakes 'cause he thought they'd be like "pancake" pancakes -- with syrup and butter. Um... no... they are more like fried mashed potatoes.
