We're having chicken fajitas, salad and corn (not on the cob). It's perfect for this heat and it's so fast to fix.

Peppered beef. It's been cooking all day, and the smell is driving me batty. I've been hungry for hours, and eating lunch didn't make it better!
I think we'll cook up some fingerling potatoes and some broccoli to go with it.

DH brought home the remnants of a Christmas hamper last night, where the contents had to be used, so I had canned salmon (very nice) and he had canned ham with salad, followed by shortbread and mint chocolates.

The girls were out tonight but I had some chicken that had to be cooked so I made cutlets with a seasame ginger glaze and then some sweet pototo pancakes. The girls had printed out some Disney recipes that they wanted to have before our trip (to get us in the Disney mood) and the pankcakes were one of them...very yummy. It was a bit strange eating alone (as it is rare that both girls are out at the same time) but it was a nice, quiet eact in front of the TV evening for me.

We had pizza and watermelon last night. My kids (and one visiting friend) ate a whole watermelon!Tonight we're grilling turkey burgers. We'll have veggie straws and watermelon on the side.

Tonight was DH's company picnic which is actually a crab feed!! So it was lots of messy, yummy crabs for me (with some shrimp on the side)

Tonight was spaghetti, meatballs and sausage. Started with a salad with orange peppers, candied walnuts, cranberries, cheese, croutons.

We have shoo-fly pie for dessert! Right from Lancaster County!

I was going to fix a chicken alfredo pasta but it just didn't sound good. Still too dang hot. We made a run to DQ. Those brownie blizzard thing sounded pretty good and we decided to just grab dinner there too. I had a chicken quesadilla - not bad, not bad at all. Then we had the brownie blizzard. Yikes! Ok, once was enough. Too much chocolate (yes, I said too much) too rich. (that's my story and I'm sticking to it )

Lastnight since I bailed on the concert (stupid tornado warning) I went and got Sushi take-out from the fabulous place down the street from me. I had: spicy california roll, hamden roll (shrimp, cream cheese, avocado, apple), new york (same as hamden except salmon instead of shrimp), spicy tuna roll, and I tried for the first time the ichiban roll, which is basically a shrimp tempura roll with the addition of cream cheese inside and eel on top. First time trying eel, and I am now a fan And so is my one cat after he stole a piece of eel off my plate!

Tonight was nothing as exotic...Campbells Italian Wedding soup...lol
