| Cucumbers I've got several cucumbers that need to be eaten. We've had enough green salad for a while...so don't want to add them to one of those. I've done them in Ranch dressing. I've marinated them in vinegar, sugar, onion and water, so don't want to do that again. Help. What else can I do with them?

| Taziki (sp?) yummo ~peel and de-seed the cucumber then shred it. Next mix with: plain yogart crushed garlic lemon juice toast up some flat bread, pita's or Nan bread, dip and enjoy. It's a bit labour intensive, but so worth it. |

| Cucumber sandwiches? There is a polish salad version that I love but similar to the other salad you made. * 2 cucumbers, very thinly sliced * Chives * 2 tablespoons vinegar or lemon juice * 2 tablespoons sour cream (low fat) * salt and pepper, to taste (I like a lot of pepper) * 1/2 teaspoon sugar * 1 teaspoon chopped fresh dill

| One of my favorite ways to prepare cucumbers: Fatoosh. 1 cucumber, chopped into bite-size chunks 1 small red onion, chopped into bite-size chunks 3 tomatoes, chopped into bite-size chunks a handful of chopped fresh parsley and a bit of chopped fresh mint 1 garlic clove, peeled and chopped 2 tablespoons ground sumac (you can leave this out if you can't find it, but it really adds a lot) 1/4 cup lemon juice 1/4 cup olive oil 1 teaspoon salt 1/4 teaspoon ground black pepper Toss all of the veggies with the dressing ingredients and let it marinate for an hour or two. Scoop it with pita bread, or stuff it into pita pockets with hummus (my personal favorite), or you can toss it with romaine lettuce and toasted pita pieces for a more authentic fatoosh salad.

| One of my favorites from my great-grandmother: Cut the cucumbers into chunks (skin optional) and 'toss' with sour cream until coated. Serve chilled. Very refreshing on a hot summer night and very simple to make! ![]()

| You could send them to me. I just cut the cucumbers up in slices and eat them. I'm too lazy to do anything else. What about chilled cucumber soup?

| I just make pasta salad with cucumbers, ham, tomatoes, onions and cheddar cheese cubes. Cut all the veggies, ham and cheese to about the same size. Boil the pasta (your choice) until done. Then rinse with cold water. Add the other ingredients, 1/2 cup of Mayo, mix and chill. The other thing I make is paper thin cucumber slices, paper thin onion slices and mix them together. Add salt and chill in the refrig for a few hours with something heavy ontop to press out the moisture. Then strain and rinse with water. Add Green Goddess salad dressing and serve. Such a WONDERFUL summer treat. I've tried the vinegar kind and didn't like it much. This one isn't as sour as the vinegar kind. IMHO

| Love cold cucumber soup. All of the ideas and recipes are great. We get such lousy ones at the store that I'm lucky to find one a week. Love the idea of using a cuc slice as a cracker.

| Great ideas guys. I think I'll be trying some of them out. Thanks bunches! Unfortunately our vines are starting to look rather sad, so I'm not sure how many more we'll get. I'm hoping our neighbors will give us some of theirs again (they have chinese cucumbers....long skinny ones with greenish rather than whiteish flesh).

| what about Panzanella? cut up your cucumbers, some tomatoes and some onions, mix with some day-old crusty bread torn up in chunks. toss with olive oil and salt & pepper to taste then drizzle with some balsamic vinegar Serve over some nice greens for a refreshing salad. |
