| Any raspberry recipes? Our raspberry bushes are going crazy, sending up new shoots every year, and now I am inundated with them. Last night I spent an hour picking, and picked well over 3 quarts of them. I can pick that much every 2-3 days. Any ideas what to do with them? We've made smoothies, and I've never done the canning/jam thing. I think I'm going to have to start freezing them because there's no way we're going to be able to keep eating this much!! ![]()

| I love raspberries on vanilla ice cream. You could do a lemon raspberry tart or muffins with raspberries. How about a berry crisp or crumble? Or you could just ship them to me since they are my favorite berry!

Raspberry Pork 4 pork chops or small pork roast 6 T butter Flour for coating 3 T oil 2 onions, sliced 3 c chicken broth 2 T red wine vinegar 1 T balsamic vinegar 1 T brown sugar 2 c raspberries Rinse the pork and coat the pork in flour. Brown the pork with the oil and 1/2 the butter. Remove pork and layer onions on bottom of pan. Put pork on top of onions. Pour in 2 cups of the chicken broth, cover and cook in 350 degree oven for 45 minutes. Remove pork and add remaining broth to drippings, vinegars, brown sugar and butter. (You can remove onions if you don't want to serve them.) Whisk together. Add berries, stir and cook heat until slightly thickend. Poor sauce over pork and serve. This is a quick one I make (not from scratch)... Chocolate Raspberry Cake 1 box chocolate cake mix 2 cups fresh raspberries 12 ounces semi-sweet chocolate chips 1 tub of chocolate icing Prepare cake mix as directed. Fold in raspberries. Pour into greased and floured pan. Sprinkle chips on top of cake mix. Bake at 350 degrees for approximately 30 minutes. Cool. Top with icing.

| Oh, yum! raspberries are soooooo good!!! I've made a desert/trifle with chocolate brownies, cool whip and white chocolate pudding, and raspberries and strawberries!!

| raspberry pancakes, muffins and raspberry cream cheese spread. For all these you just need to chop them up in your food processor and they are ready to go.
