| African Recipes I thought I'd post the recipes I made for our 'Dinner & a Disney Movie' night - (I'm sure you can guess we watched "The Lion King.") These recipes are courtesy of Jeff Smith's The Frugal Gourmet. If you ever come across a copy, it's a really great book to own, as Jeff likes to explain a bit about each recipe and the country from which it originates. When you say 'Dishes of Africa', you have to remember that the continent of Africa is vast and the number of countries huge - it's just too big to lump into one category. The Biafran Stew recipe came from George Obiozer, whose relatives and country were wiped out in the 1960s... Biafran Stew (Biafra) 1 1 1/2 lb. chuck steak, deboned, trimmed and cubed 1 2 1/2 lb. chicken, cut up 1 28 oz. can whole tomatoes 1 green pepper, cut into 12 chunks 1 yellow onion, peeled and chopped 1 tsp. Tabasco or to taste salt and pepper to taste Brown the chuck steak. Place all ingredients in a large kettle with a lid and simmer, covered, for about 1 1/2 hours, or until the chicken and beef are tender. Serve with whole wheat couscous (you can find this in most grocery stores now.) Sweet Potatoes with Coconut Milk (Kenya) (Although the sweet potato comes from America, it has been a lifesaver to those in the Dark Continent. J.S.) 3 - 4 sweet potatoes, peeled and cubed 1 15 oz. can coconut milk 1 tsp. ground cardamom (you can substitute 1/4 tsp. nutmeg) 1 Tbsp. brown sugar In a heavy pot with a lid, blend all the ingredients. Simmer, covered, until the potatoes are tender, about 30 minutes. Enjoy!

| I love Sweet Potato - it didn't seem to exist in the UK when I was younger but it's becoming increasingly popular now. Pairing it up with coconut milk seems genius - I'll be trying that within the next couple of days. Thanks for posting these. |
