Blueberry Muffins

Anyone have a tried and true recipe? I made muffins today from a recipe in a cookbook and they didn't come out very good. I looked on foodnetwork.com and all their blueberry muffin recipes have very mixed reviews. Thanks.

This is the recipe I always use...it's a version of the famous Jordan Marsh Blueberry Muffin....it's so easy and tastes delicious
1/2 cup (1 stick) butter
2 eggs
1 1/2 cups sugar
1/2 cup milk
2 cups flour
1 tsp vanilla
1/2 tsp salt
2 tsp baking powder
2 cups blueberries

put butter and sugar into a mixing bowl and cream together..... add all the other ingredients (I save 1 cup of blueberries) and mix.....add the rest of the blueberries and stir into batter to keep some of the berries whole if you choose......put into paper lined muffin tins (or butter entire muffin pan...cups and top).......sprinkle tops with sugar.....bake at 375 degrees for 35 minutes....check doneness with a toothpick.......rella

Funny - I also have what is supposed to be the famous "Jordan Marsh" blueberry muffin recipe - but mine is a little different. Same ingredients, with the exception of the vanilla.

1/2 c. butter
1 1/4 c. sugar
Cream together, then add 2 eggs, 1 at a time, mix together till well blended.

sift together 2 cups flour, 2 tsp baking powder and 1/2 tsp salt - add to batter gradually, alternating additions with 1/2 cup milk.

Mash 1/2 c. blueberries using a fork to release the juices - add the mash to the batter, and fold in. Then fold in the remainder of the berries left whole.
Fill muffin cups 2/3 full - sprinkle the tops with sugar.
Bake at 350 degrees for 30-40 minutes, till lightly browned.

These muffins are YUMMY!!!

I just made some this morning with wild blueberries the girls picked from kayaks on the lake.


Makes 12 regular sized muffins (line pan with paper cups for best results - you can butter tin - but the sugar and berries make them stick a bit.
