| Here is how my Nonna made it: 1lb shrimp 1 tsp sea salt 1/2 cup extra virgin olive oil 4 lg garlic cloves, finely chopped pinch red pepper flakes 1/4 cup cooking sherry or white wine 2 tbsp parsley 4 tbsp fresh lemon juice 1. Preheat oven to 400 degrees 2. Peel, devein and butterfly shrimp ( I use already peeled and deveined and don't bother to butterfly them or take off their tails). Soak in ice salt water for 15 minutes to bring out their briny flavor. Drain and dry shrimp completely. 3. In a baking dish, combine olive oil, garlic, pepper flakes, half the parsley, half the lemon juice and the shrimp. (I usually dot the top with about 2 tbsp of unsalted butter, cut up into small chunks.) 4. Slide dish onto the middle rack of the oven and bake about 10 minutes, or until shrimp turn pink. Remove from oven immediately. 5. Sprinkle remaining lemon juice and parsley over the top. Serve immediately. I like to serve it with fettuccine alfredo and some nice crusty bread to soak up the leftover garlicky juices. |

| I use the one from Barefoot Contessa. Linguine with Shrimp Scampi Recipe : Ina Garten : Food Network Ingredients nocoupons
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package. Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine. When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.
