| Crock Pot/Slow Cooker recipes for Hot Weather I thought this would be a good place to share your favorite slow cooker recipes. I am in SC and it's in the 90's. The thougt of heating up the kitchen even more is not appealing. So, if you have a good recipe for this hot weather, please share with us. I need some new ideas too! Thanks! |

| I usually don't use my crockpot during hot weather. But this week when I went shopping it was rainy and gray outside and they had stew meat on sale....so I bought it and cooked stew for that night. That was the only heat I made in the kitchen as the rest of the meal was a salad. The best summer thing I can think of is making pork bbq in the crockpot and making sandwiches for it for dinner with slaw and corn on the cob.

| My family's favorite crockpot recipe is crnaberry pork. I use a 2 - 2.5 pound pork roast. Mix 1/2 cup cranberry juice, 1 16 oz. can jellied cranberry sauce, 1/2 cup sugar, 1 tsp dry mustard, 1/4 ground cloves and pour it over the pork in the crock pot. Cook on low or 6-8 hours. After you take the pork out you can thicken up the liquid left in the pot with cornstartch mixed with equal parts water to make a cranberry gravy. I serve it with either mashed potatoes or white rice!

| I posted this on another thread already....we eat this alot. Super Easy Chili 1 lb ground chuck 2 cans red kidney beans, drained 1 (26.5 oz) can garlic-herb spaghetti sauce 1 (14.5 oz) can diced tomatoes 2 Tbls. chili powder 1 tesp. black pepper 1/2 tesp. salt Garnish: sour cream, cheddar cheese, and minced green onion In a medium skillet, cook ground chuck over medium -high heat until browned. Spoon beef into crockpot and add beans, spaghetti sauce, tomatoes, chili powder, pepper and salt. Cover and cook for 6 hours. Garnish and serve. I got this one out of Paula Deen's magazine and I have made it numerous times and my family loves it. |

| My favorite thing to do with the crockpot is to put about an inch or two of beef stock in the bottom of it, then put a roast in with some onion, baby red potatoes and baby carrots . . . put a little more beef stock in (so it almost almost comes to the stop of the roast), cook it on high for about 4 hours . . . YUM. I made one night before last and the roast just fell apart as soon as I tried to get it out of the pot. ![]() We stuck a bag of steamable green beans in the microwave to go with it as well. ![]()

| Pepper beef sandwiches 1 3-4lb chuck roast 1 jar Vlasic mild pepper rings (or hot) Place in the crockpot all day. Shredd and put on buttered buns. We have used both the hot and mild. My husband and I take turns. They are both great. If I make this for company I double the amt of roast and use 1 jar of each. We have been having these alot. They are addicting. Good luck. |

| We do not drain the juice, just pour it right over the roast. I too have used the pepperoncinis. It is sometimes hard for me to find them so I started using the Vlasic. (cheaper too) But those work great if you can find them. I have seen a similar recipe to the previous one but it used a packet of Hidden Valley Ranch. I tried it and didnt think it really did anything to it. I use onions in everything and tried it in this but didnt even notice them in there. I think that the peppers have so much flavor it drowns out the other stuff so I felt it was a waste to use them. The italian dressing might be more noticeable though. Maybe just play around with it and see what you like. I love making this. It just doesnt get much easier. |

| We do bbq country ribs in the crockpot in the summer. Super easy and everyone loves it. I just take a package of the country ribs and salt, pepper, and a little garlic and then sear them on all sides in a little veggie oil and then put in crockpot with bbq sauce, probably close to a whole bottle. It doesn't have to be completely covered and then cook on low for 6 hours and they just fall apart off the bone. Sometimes I take them out and put them on the grill to get a crispy bbq on the outside. Sometimes I'll also quarter an onion and put it on the bottom of the crockpot before putting the ribs in and we use them in sandwiches on a good crusty bread. |

| 1 can of campbells golden brown mushroom soup package of porkchops large onion sliced Brown the porkchops then add the soup to the crock then 1/2 of the onions then the browned chops then the other 1/2 of the soup and 1/2 to full can of water depending on how much juice you want after the chops are cooked. My family prefers the 1/2 can of water method. Cook on med for 4 - 5 hours. I serve with mashed taters. Sometimes I even add small taters to the crock so I have everything in one pot.
