| Just got a bunch of tomatoes and cukes from my mom's garden... But they're all really ripe and won't last but a few days! Walt's picking up some goodies on his way home from work for me to make veggie wraps all weekend. ![]() Veggie Wraps: 1 large sundried-tomato sandwich wrap 2 T cream cheese blended with pureed roasted red peppers a few leaves of leafy green lettuce 3 slices of tomato 2 cucumber sticks 2 carrot sticks or yellow bell pepper strips 1/4 avocado, sliced a handful of alfalfa sprouts Green Wraps: 1 large spinach sandwich wrap 2 - 3 T cream cheese a few leaves of leafy green lettuce 6 cucumber sticks 1/4 avocado, sliced a handful of alfalfa sprouts For Walt, I sometimes add a slice or two of ham, turkey, pepperoni, or salami. Big bottle of sun tea or pink lemonade to drink with it on a hot day...Hmm...sounds like we're having a picnic tomorrow. Oh, and Eileen, I'm sure there's someone who makes a gluten-free wrap, so you could cut these into pinwheels and they'd make a great bento addition! ![]()
