| Panzanella (Sort of) So in a rare moment of "me" time, I was watching Food Network and saw "What Would Brian Boitano Make?" He made a crouton salad that looked so yummy I had to try it. I combined elements of his recipe with elements from a Barefoot Contessa recipe and now my house smells like garlic! It's in process, so I'll have to let you know how it tastes! I took a small baguette French bread and cubed it up. Threw them in a large stainless steel bowl. Next, in a saucepan, I combined 3T. olive oil with 3T. butter and melted them together over med. heat. I added a small sprinkling of red pepper flakes, 3 hefty cloves of garlic that I minced, salt and pepper. I cooked that together for about 3 minutes over med. heat. After it had cooked for 3 minutes, I poured that mixture over the bread cubes and tossed to combine the oil/butter mixture with the bread cubes. Into the oven for 10 minutes at 400. They came out a bit blonder than I wanted, so I also put the broiler on for about 2 minutes until they developed a toasted appearance. Now they're cooling. I bought 2 pints of beautiful tomatoes at the farmer's market yesterday. It's a combination of yellow pear, red grape, and a new one I'm not familiar with called "White Cherry". I'm going to halve them and throw them in with the croutons along with: 1 seedless cucumber, peeled and sliced 1 small jar roasted red peppers, roughly cut 1/4 c. diced red onion 1/2 c. pitted Kalamata olives, halved 10 basil leaves from my herb pots on my back deck Toss with a red wine vinaigrette salad dressing. ![]()

| It was really good! Nothing tastes quite like fresh tomatoes. : ![]() Not only did I get to watch TV, but I also cooked and had a very relaxing day! Now for that glass of wine... ![]()
