I love making a pot roast with potatoes and carrots, or sometimes a meatloaf, chili, soups or beef stew.

I love chili and this Lipton recipe! It smells so good!
Slow Cooker Pot Roast
1 Tbsp. oil
3-to 3-1/2- lb. boneless beef pot roast (rump, chuck or round)
4 carrots, sliced
4 medium all-purpose potatoes (about 2 lbs.), cut into 1-inch pieces
2 envelopes Lipton® Recipe Secrets® Onion Soup Mix
3/4 cup water
1. Heat oil in large nonstick skillet over medium-high heat and brown roast. 2. Arrange carrots and potatoes in slow cooker. Top with roast and set aside. 3. Combine Lipton® Recipe Secrets® Onion Soup Mix with water in glass measuring cup. Add to skillet, scraping up any brown bits from bottom of pan. Add soup mixture to slow cooker. Cook covered on Low 8 to 10 hours or HIGH 4 to 6 hours. Remove roast and vegetables to serving platter. 4. Thicken gravy, if desired, by combining additional 1/4 cup water with 2 tablespoons all-purpose flour. Cook on HIGH 15 minutes or until thickened.

Have you ever checked out this blog: A Year of Slow Cooking

This woman cooked in her crock pot every day for all of 2008. She still adds recipes on a pretty regular basis. I like that she's brutally honest about how the recipes came out. In scanning over them, there was one she tried that just didn't turn out at all and she admitted that they made a McDonald's run for dinner instead!

A friend of mine just pointed me to this blog a few weeks ago. I tried the 20-40 Clove Garlic Chicken and it was YUMMY! Even my picky kids ate it up. The meat was literally falling off the bone.

Now I'm hungry just thinking about it!

Once a week, I put meatballs (boring--- I bake them in the oven, then put them in the crockpot with gravy, sometimes sausage goes in there with them, makes them a little spicer, but that's cooked before as well).

I bumped into this blog shortly after she started and kept tabs on it every so often. Loved that she kept it on topic and tried so many different things. So many blogs start with a specific mission statement and just veer completely off topic until they have nothing to do with their origin. Her honesty as in the situation you cited above was great as well.

The only dishes I ever seem to make in my crock pot are red beans (for red beans and rice) and chicken tostados.

Here's one of my faves:
a roast-I like pork
1 packet of taco seasoning
1/4 cup water
1 can green salsa
Add all ingredients and let it cook all day. We eat the meat like fajita meat on tortillas with all the fixings!

I love to make just about any kind of soup in the crock, but I think my favorite is "steak" soup. That's what we always called it, but since you make it with a cheap roast cut, technically that's not really accurate.

3 C. water
2 sm. chopped onions
3 stalks chopped celery
2 sliced carrots
1 lb. canned tomatoes
1 tsp. pepper
1 (10 oz.) pkg. frozen mixed vegetables (I actually do corn, we don’t like the bean, pea, carrot, corn whatever mix)
1 lb. diced chuck roast or top round, browned and drained
2-4 T. beef base, granules or paste
1/2 C. butter or margarine
1/2 C. flour

Put all ingredients except butter and flour in crock pot. Cover and cook on low 8-10 hours. One hour before serving, turn to high. Make a roux of 1 stick melted butter or margarine and 1/2 cup flour. Stir until smooth. Pour into crock-pot and stir until thickened.
