| Morning Baked Goods? Hey folks! Other than muffins, I rarely bake. However, I got roped into baking at a recent PTA meeting. I have NO idea what to make! They will be served on "Grandparents and Special Friends Day", in the morning. So I would think some kind of coffee cake or breakfast bread would be better than cookies or something, but I need to be able to portion them up so something crumbly and messy isn't a good idea. Any ideas or great morning baked goods recipes out there? Thanks!

| What's wrong with muffins? They're single servings, preportioned, no more crumbly than a coffee cake, and it's easy to make a variety of flavors.

| We had a potluck breakfast for our benefactors last May and the quiches that poeple brought went over really well. Can't imagine it'd be harder to make then a batch of muffins or a coffeecake.

| Why not do something seasonal like these Cape Code Cranberry Bars? Cape Cod Cranberry Bars (Adapted from KAF Cookie Companion) For the crust 2 cups all-purpose flour 1 cup confectioners' sugar 1/4 cup packed brown sugar 1/4 teaspoon salt 1 teaspoon vanilla 12 tablespoons unsalted butter, softened 1 cup pecans, toasted and chopped For the filling 2 cups cranberries - fresh or frozen (do not thaw if frozen) 1 1/2 cups peeled, cored and chopped apples 1 cup fresh raspberries 1/2 cup granulated sugar 2 tablespoons all-purpose flour 2 tablespoons unsalted butter, melted To make the crust Preheat oven to 350 In a medium bowl, whisk together flour, sugars and salt. Add the vanilla and butter - use a pastry blender to mix the butter into the flour until the mixture is very crumbly. Stir in the nuts. Measure out 1 1/2 cups of the crumb mixture and set aside. Scoop the remaining crumbs into the bottom of a 9" x 13" baking pan lightly coated with nonstick spray. Pat the crumbs down to form an even layer - bake for 15 minutes. To make the filling While the crust is baking, add the cranberries, apples, raspberries and sugar into a food processor. Pulse a few times to chop the cranberries. Add the flour and melted butter - pulse a few more times to combine the mixture. Scoop the mixture over the baked crust and use an off-set spatula to spread it evenly. Crumble the reserved crumb mixture over the filling - bake until the filling is bubbly and the crumbles begin to turn a golden brown, about 35 to 40 minutes. Remove and let cool completely before cutting into bars.

| Whoops...I was drooling and forgot to post my recipe... These were very popular at the early hockey games... Lemon Squares Crust: 1 c softened butter 2/3 c confectioner's sugar 1 1/2 c all-purpose flour Pinch of salt Filling: 5 eggs 2 c granulated sugar 1/2 c fresh lemon juice Grated rind of 1 lemon Extra: Confectioner's sugar for topping Preheat oven to 350 degrees. Prepare the crust by mixing all of the ingredients in a large bowl. Knead the dough with your hands until soft and pliable. Press the dough into an ungreased 9" x 12" cookie pan. Pre-bake the crust for 10-15 minutes or until lightly brown. Make the filling: Mixe the eggs and sugar until light and lemon colored. Stir in the flour. Add lemon juice and rind. Pour the lemon filling on to the crust. Bake for 20 minutes or until filling is set. Cool completely. Sprinkle with confectioner's sugar before cutting into squares.
