| This was too good to not share... It was a gloomy day here in NC. I decided to make some soup. However in a desperate attempt to use only items I had in my kitchen I found this blog A Year of Slow Cooking: Slow Cooker Baked Potato Soup Recipe I used my slow cooker but you could easily make it on the stove! The potato soup turned out so yum! I didn't quite use 5 lbs and I only used 1 1/2 qts of broth and 12 oz cream cheese. I topped it off with shredded cheese, bacon, and fresh chives. It seemed like there was a lot when it was finished DH and I had about 2 bowls (lunch and dinner) (even my picky 3 year old) had seconds and there is only a tiny bit left (which I hid in the back of the refrigerator) so I can have some to take to work for lunch! Shh don't tell! |

| I was excited to see her book is out too -- and I didn't know that she cooks gluten free until I really checked out the website when Elaine posted it a little bit ago. I can't wait to try some of the recipes. ![]() Eileen

| I love that blog! I also ordered her recently published cookbook, and it arrived last week. We made her Applesauce Chicken (ok) and her French Dip sandwiches (YUM!) last week. In fact, we have leftover French Dip that may be our dinner tonight. It was so tasty. |

| I tried the recipe on Sunday night. Both DD and I thought it was good, not great. When I ate leftovers the next day, however, it was GREAT! I'd let this one cool and refrigerate overnight so the flavors belnd more. I just finished the last for lunch. Diane |
