3 eggs
1 1/4 cups of corn oil
1 1/3 cups packed brown sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 cups flour
1 8oz can of crushed pineapple in natural syrup
1/3 cup shredded coconut
1 cup coarsely chopped walnuts (optional...I don't use)
3 cups grated carrots
Preheat oven to 350.
Grease and flour 13x9 pan.
In a large bowl, beat egggs, oil and brown sugar until well blended.
In a separate bowl sift together the baking soda, cinnamon,salt and flour......then gradually add it to the egge mixture.....do not overbeat. Add pineapple with syrup, coconut, carrots and nuts.....beat well.
Pour batter into the prepared pan and bake for 45 to 55 minutes or until toot6hpick inserted in the center comes out clean.
Cool in pan for 10 to 15 minutes. Invert onto cooling rack and cool completely.
This is the cake I always use for Easter dessert.....I frost it was a cream cheese frosting. I hope you like it.
This is the carrot cake recipe I have made. (Although I add about twice as much cinnamon or more...I really like cinnamon. ) It's always come out well.
Preheat oven. Mix eggs and sugar well. Add oil, flour, baking flour, vanilla, cinnamon, nutmeg and salt (one by one), keep mixing everything together.
Grate carrots, dice pineapple and walnuts. Mix into the batter.
Put batter into a baking dish and bake in oven for 50 - 60 min.
