| Re: Favorite Summer Salads? For my mom and dad's 50th wedding anniversary this September I'm making Pasta Salad for 125 people! ZESTY PASTA SALAD You can use any kind of pasta, even spaghetti. Chopped green peppers and onions. Cherry or Grape tomatoes, halved. Pepperoni slices Black Olives Parmesan Cheese Italian Salad Dressing ------------------------------------------ Another awesome salad I like to fix is: 7 LAYER SALAD 1 Head of lettuce 1 Head of cauliflower 1 small box frozen peas Mayo 1 packet dry Italian Salad Dressing Mix Bacon Bits Parmesan Cheese Layer salad in the order of ingredients. | Re: Favorite Summer Salads? We eat a lot of Betty Crocker Suddenly Salad. It's not too bad and quick. I'll have to get back to you on the homemade type recipes. I make them so infrequently they are not emblazened in my brain. |

Here is one of my favorites: Taco Salad 1 lb. ground beef, rinsed and drained 1 can chili hot beans, drained 1 tomato, diced 1 green pepper, diced 1 onion, chopped cheddar cheese 1 bottle Catalina dressing fritos just combine all ingredients and chill. you can play with the amounts to suit your tastes. If I don't have chili hot beans, I have used rinsed pinto beans or kidney beans and they all work fine. If you're making ahead of time, don't add the fritos until serving. diet tip: omit fritos and serve over a bed of lettuce. |

This is my favorite summer salad recipe: 1 bag baby spinach leaves (rinsed & spun) 1/2 pint fresh strawberries (rinsed & sliced) 1/2 cup vegetable oil 1/4 cup white vinegar 1/4 cup sugar (or Splenda) 1 Tbs poppy seeds 1/4 tsp paprika 1/4 tsp salt In a medium bowl, combine oil, vinegar, sugar/splenda, poppy seeds, paprika and salt. Combine spinach and strawberry slices in a large bowl; add dressing, tossing until well coated. Yum Yum [img]graemlins/yuma.gif[/img] I'm hungry just thinking about it! |

Pasta Fruit Salad 1 c. uncooked small pasta (I prefer ditalini) 1 11 oz. can mandarin oranges, drained 1 8 oz. can pineapple tidbits/chunks, drained 1 c. green or red seedless grapes 1 6 oz. container lemon yogurt, I prefer "custard style" 1-2 tbsp. sugar 1 tsp. cinnamon 1 tsp. vanilla 1 c. halved strawberries Optional: banana/kiwi slices for garnish, if desired Cook pasta until desired tenderness. Rinse/drain. Let cool. In a med. bowl, combine yogurt, sugar, cinnamon, and vanilla. Then add the fruits (except the strawberries) and the pasta. Gently toss together in the "dressing mixture" (yogurt). Cover and refrigerate for 1-2 hours. Prior to serving, gently toss in the strawberries. This is a VERY refreshing salad. And you can substitute in your favorite fruits. For example, instead of the strawberries -- I have used blueberries. You can also layer banana/kiwi slices on top of the dish -- as garnishment. Enjoy! Diced Chicken Breasts Sliced Strawberries Chopped Pecans or Walnuts Bag salad Rasberry & Pecan Vinegrette (I use the one by Ken's Steakhouse) I toss all ingredients together & serve. Dh even likes it, & he is extra picky |
