potato soup recipe

Hi
I am looking for a really good potato soup [img]graemlins/yuma.gif[/img] recipe. One that is creamy and moderately thick.

Please share your recipes with me.

BAKED POTATO SOUP

6 baking potatoes
1/4 cup plus 3 Tbl butter
1/4 cup plus 3 Tbl all purpose flour
4 cups whole milk
1 tsp salt
3/4 tsp ground black pepper
1/3 cup bacon bits
3 green onions chopped
8 ounces shredded Cheddar Cheese
8 ounce container sour cream

1) Prick potatoes with a fork and bake in microwave 3 or 4 at a time. Scoop out flesh.

2) In a large saucepan over medium heat, melt butter. Whisk in milk, a little at a time, stirring constantly until thickened. Stir in potatoes, salt, pepper, 1/3 cup bacon bits, 2 Tbls green onions and most of the cheese. Cook until thoroughly heated. Stir in sour cream and heat through. Serve topped with remaining bacon bits, onion and cheese.

This soup is to die for!!

Potato Cheese Soup
1 lg chopped onion
2 med potatoes peeled & coarsely chopped
1 carrot peeled & coarsely chopped
2 cloves garlic, minced
3-4 T butter
1 T fresh dill (I don't like dill so usually substitute mix of marjoram & thyme)
2 c. vegetable stock or water(is from vegetarian cookbook...I usually use chicken broth).
2 c. heavy cream or milk (I usually use mix of one can low fat evaporated milk & milk)
6 oz cream cheese
1 c. shredded cheddar cheese

Saute onions & garlic in butter (I use Pam) until soft. Add carrots & potatoes & saute 4 or 5 minutes (don't add color). Add broth & simmer until vegetables are fork-tender. Working in batches, blend in food processor or blender with milk & cream cheese. If soup is too thick add additional milk...salt & pepper to taste. Return to pot and gently reheat. Right before serving add cheddar cheese & stir until melted.

This soup is rich & fabulous, and one of the few soups that DH actually deems to be "a meal." It is relatively high-fat, but there are easy ways to cut most of the fat without the flavor; however, to get the richness I would only use low fat ingredients, not fat-free.
