| Le Cellier Cheddar Cheese Soup Good for a winter day! Le Cellier Cheddar Cheese Soup 1/2 lb bacon cut into 1/2" pieces 3 celery ribs cut into 1/4" pieces 3 cups milk 1 medium red onion cut into 1/4" pieces 2 Tbsp butter 3 cups water or chicken broth 3 dashes tabasco 1 cup flour 1/2 cup beer 3/4 lb grated white cheddar cheese salt and pepper In a soup pot, start to browm bacon over medium heat. When bacon starts to crisp, add onion, celery and butter. Cook until onion is translucent. Add the flour and incorporate with butter. Cook for 4 munutes, stirring constantly. Add the walter/broth and whisk to remove lumps. Bring to boil and then reduce heat and simmer 15 minutesm stirring every couple of minutes. Add the milk and simmer for another 15 minutes. DO NOT BOIL. Turn off heat and stir in cheese and beer. Add tabasco and salt and pepper to taste. If soup is too thick, thin with milk. Top with chopped scallions or chives and serve with crusty bread. Tastes like Epcot!!! [img]graemlins/yuma.gif[/img] |

| Re: Le Cellier Cheddar Cheese Soup I don't see why you couldn't omit the beer. I think it's there for flavoring. Kind of like adding vanilla to a cookie recipe (sometimes you can't tell the difference if you forget to add or find out you don't have any in the cupboard & you already have the dough in the making). |

I also left out the beer and didn't even remember that it was in the recipe until you mentioned it specifically! This soup freezes well too! Just put the leftovers (if you have any!) in a ziploc bag and freeze! Thaw in your refrigerator. Yummy! I may have to make some this weekend myself! |

| Re: Le Cellier Cheddar Cheese Soup I tried to reduce the fat in this recipe by using 1/2 the bacon, used 1% milk, light margarine, and 2 cups regular cheddar and 1 cup lowfat cheddar. The lowfat cheddar didn't melt as well as the regular, so I'm going to try it again with only 2 cups regular cheese and see if it's cheesy enough. Will let you know the results! |

| Re: Le Cellier Cheddar Cheese Soup I made this for lunch today! It was good. I used Harp for the beer and it was yummy. I also used yellow medium cheddar instead of white. The thing I liked about it was that it was easy and took only 45 minutes! Usually when I make soup on a Saturday it takes hours!!! Maggie |
