Here is my Boma-inspired Couscous recipe!

This was a side dish to another recipe I have, called "Sticky Chicken" that is done in the crockpot. This was *CHEAP* to make (important right now!) and very

olive oil
1 onion, chopped
2 carrots, sliced
2 stalks celery, sliced
1 yellow squash
1 zucchini squash
1/2 red pepper, chopped
1/2 green pepper, chopped
1 "regular" can garbanzo beans/chick peas
15oz can diced tomatoes
1/4 cup fresh basil
1/4 teaspoon garlic powder, or 2 cloves, minced (if using fresh, add with onion)
1/2 teaspoon turmeric
1 teaspoon curry powder

2 1/2 cups broth or water
2 cups couscous

Oil a large saute pan/skillet. Saute onion until soft. Add carrots, celery, squash, pepper and saute for a few minutes, but still crisp. Add garbanzos/chick peas, tomatoes, basil and spices. Salt and pepper to taste. Keep over low heat until couscous is ready.

Boil broth/water, add couscous, remove from heat and cover. Let stand, covered, for a few minutes, until water is absorbed. Fluff with a fork, then stir into veggie mix or serve to plate and put veggies over the top.

I love couscous and have all the ingredients (except for the squash) to make this! Thanks for posting this recipe, Dawn. Could you post the sticky chicken recipe please?

sounds good dawn!!! Count me in on wanting the recipe for the stickey chicken as well!!!!!! I am always in the mood to try something new.
