OK, so my husband asks me this all the time and I always answer "I am not sure, likely not enough traffic to justify it...." Finally, I told him I would ask here : )
We own at Kidani but have only stayed at Jambo. (we have had excellent luck trying other DVC resorts at 7 months out) In November we are finally going to actually stay at Kidani. We will be buying groceries and doing breakfast in the villa. (and likely using one of the DDPs) It does seem to me that Disney would get more of our money if we could just buzz downstairs and do a quick breakfast on our way to the parks. The thought of trekking all the way to Jambo makes me willing to cook in the mornings!
So why are there not more quick serve options at Kidani Village?
(even the pool bar is extremely limited)
Restaurants are "Disney" decisions, not DVC. DVC can relay feedback from members and help gauge interest but ultimately the food & beverage folks decide which locations are built, what they serve, hours they are open, etc.
The sense is that a counter service location at Kidani would not earn enough additional business to justify its existence. And bear in mind that "additional business" means people who would only eat Counter Service meals IF there were a location at Kidani.
In Disney's eyes, most people will either travel over to Mara at Jambo, make due with what is offered at Kidani, eat a CS locations in the theme parks or some other approach that still puts similar dollars in Disney's pockets.
Yes, Disney is losing some money from folks who decide to buy groceries, eat off-site or some other approach due to lack of CS at Kidani. But those lost dollars aren't enough to justify opening another location.
Keep in mind that you can buy counter service lunches at the pool bar at Kidani. My family ate lunch there one day. Enjoyed a nice sandwich as kids were swimming and used our conter service credits.
Yes, that is our biggest disappointment with Kidani. We buy groceries for breakfast, but there have been several times we would have enjoyed CS for lunch, or even a late night bite. The poolside menu is very limited.
It is poolside dining and the menu is rather vast but you have to phone it in from what I have read. Not planning to stay there to investigate.

I have read about the pool side dining that you phone in, that seems to be a larger menu than what is available at the poor bar itself. I was wondering if either option is available on the dining plans? (I would assume maybe just the pool bar items?)
