well we wont be doing the safari sunrise we wont get to wdw till 11am

I agree that club level is a wonderful indulgence. We were so spoiled the first time we tried it that we determined it's worth it to go to WDW less often so that we can afford CL every time.

what kind of food and drinks do they put out for snacking
What exactly is put out varies from one resort's CL to the others and may vary from one lodge to another at some. I know people who stayed CL in the Sugar Loaf Lodge at the GF said here that they didn't have as lavish a spread as we had in the main building there.
When we were at the GF, we ended up saving four days' worth of breakfast credits and using those for room service because the continental breakfast was so ample. There was an unbelievable variety of foodstuffs. The breads, scones and pastries were freshly made daily. I'm drooling just recalling how yummy they were. You can even load a tray and take it back to your room to breakfast in bed if you'd like.
Then, the lunchtime "snacks" were enough to make a light meal with. There would be platters of cheeses and coldcuts, breads of various types, chips, dips, pickles and raw veggies, usually some fruit, too, and maybe a bowl or two of some kind of prepared salad.
Late afternoon was small pastries and cookies...teatime-type stuff.
Evening fare was cocktail party munchies for the most part with some liqueurs offered.
There will be a fridge somewhere in your CL lounge which has cans of Coke products all day that you can get anytime you want one. Also, there'll probably be some light alcoholic drinks, too, such as wine coolers and beers in it later in the day. This is very handy if you aren't in the mood to trot the distance to the food court.
CL will spoil just about anyone who isn't independently wealthy and accustomed to ringing the servants for whatever you want. It is seriously soooooo worth the cost.

Btw, dunno if this is the case at other resorts in CL, but at the GF, we could borrow dvd's for 24 hours at no charge. Naturally, there was a good variety of Disney movies, but the collection also included other recent movies. Watching a movie was a great way to relax for a while in the afternoon. We just gave a KTTW card to the concierge to assure they had a means of charging us if we didn't get the dvd's back on time.
