yes, you can use a single credit for breakfast. This is off the dining pamphlet:

If you are part of a Grand Gathering (8 or more guests), 1 Table-Service meal per person may be exchanged for the Good Morning Character Breakfast, and 2 Table-Service meals per person may be exchanged for the International Dinner & Illuminations Dessert Reception and the Safari Celebration Dinner.

Kids and I, (mom, sis, bro-in-law, 2 nephews/niece) used a 1 TS for the Good Morning Character Breakfast GG at Tony's in April of '09. By the way, we LOVED it! Have a great time!
